Scrumptious Summer Salad
Make the dressing first-
In a mason jar or container with a tight fitting lid, add the olive oil, lemon juice, maple syrup, mustard, salt, and pepper. Close jar and shake, shake, and shake, til emulsified (about 30 seconds).
Tip- Massage your kale! After cutting the kale into ribbons, put into a bowl, and add 1 teaspoon salt. Massage it for @ two minutes. This makes the kale silky, shiny, and super pliable.
In a large bowl, combine kale, cooked, cooled quinoa, raisins, Brussels sprouts, and carrots.
Pour dressing into bowl. Toss to combine. Enjoy!

Serves 4
Ingredients
- 1 bunch kale, stems removed and leaves chopped into ribbons
- 2 cups quinoa, cooked
- ½ cup golden raisins
- 1 lb. Brussels sprouts (follow Crispy Brussels Sprouts recipe)
- 3 carrots, shredded
- ¼ cup extra virgin olive oil
- 1 ½ lemons, juiced
- 1 Tablespoon pure maple syrup
- 1 teaspoon Dijon mustard
- 1 ¾ teaspoon Kosher salt, divided
- ¼ teaspoon black pepper
