Juicy Coffee Marinated and Rubbed Pork Chops
Ingredients for Marinade
6 bone-in (makes them more juicy), 1-inch thick pork chops
1 cup room temperature coffee, strong
2 tablespoons molasses
2 tablespoons dark brown sugar
1 tablespoon Worcestershire sauce
2 tablespoons apple cider vinegar
Ingredients for Rub
1 tablespoon ground coffee
1 ½ teaspoon salt
1 ½ teaspoon raw sugar
1 tablespoon Dijon mustard
2 cloves fresh garlic, chopped
½ teaspoon ground ginger, or 1 teaspoon fresh ginger
1 teaspoon salt, ½ teaspoon pepper
4-6 sprigs of fresh thyme
¼ teaspoon cayenne pepper
½ teaspoon seasoned salt
½ teaspoon ground cinnamon
Directions
Place all of the marinade ingredients (except the meat) into a gallon Ziploc bag and mix around to make sure everything is evenly distributed. Add meat, close bag, and squish it around to mix and coat evenly with marinade. Refrigerate for @ 3 hours, up to overnight.
Preheat an outdoor grill on high and lightly oil the cooking grate.
Remove the chops from the marinade and throw away the liquid. Sprinkle both sides of each chop with rub, using all.
Grill the chops for 4-5 minutes on each side, or until desired level of doneness (at least 145 degrees). When finished, removed chops, and place on a plate. Cover with aluminum foil and let rest for 5-10 minutes.
